How to make me
-Preheat oven to 180deg (fan forced) and lightly grease a 12 hole mini muffin pan
-In a large bowl, whisk together the vegetable oil, water and date paste until the paste has dissolved. Pour in the muffin mix and add the egg. Mix until just combined. Small lumps may occur, this is ok!
-Spoon muffin mixture into the pan, fill to the top. Bake for 20min. Cool for 5 min in baking pan before transferring to wire rack for complete cooling

I'm best kept in an airtight container and eaten within 3 days (but I rarely last that long)
